Taking on the colossal reigns of Equinox Restaurant’s kitchen is Chef de Cuisine Paul Hallett who together with his brigade of talented chefs, brings to the fore brilliant, classic Modern European cuisine inspired from his globetrotting culinary experiences. Of Welsh descent, Chef Paul grew up in a small rural area, home to a close-knitted community that is passionate about cultivating and harvesting produce from the land and turning them into comforting and tasty meals for family and friends. This has imbued in him an emphasis on top notch ingredients sourced from the best suppliers which is evident in each dish served to the dining table.
On the night of 25 June, indulge in a 3-course set menu paired with a glass of Convent de Jacobins Borgogne Pinot Noir 2012.
